Homestyle Pot Roast

1 3-4lb boneless beef roast

2 Tbsps vegetable oil

2 cups thinly sliced onions

1 680mL can tomato sauce

2 tsp each garlic salt and dried basil leaves

1 tsp each sugar, dried oregano and thyme leaves

� tsp ground black pepper

4 large celery stalks, cut into 1" pieces

4 medium carrots, cut into 1" pieces

4 medium potatoes, cut into quarteres

In a large Dutch oven, brown beef in hot oil; remove. Saute onions in drippings until tender.

Stir in sauce and spices. Return beef and add vegetables to tomato mixture. Bring to a boil, reduce heat, simmer covered for about 2 hours and serve.
