Fred's Dynamite Chili

1 lb. lean ground beef
1 medium onion, diced
� green pepper, diced
1 stalk celery, diced
1 clove garlic, minced
1 398mL diced tomatoes
1 213mL tomato sauce
� cup water
� cup pickled jalapeno peppers, chopped
3 tbsps. chili powder
1 tsp. cayenne pepper, or to taste
1 bayleaf
2 tsp. cumin
1 398mL kidney beans, drained and rinsed
salt and pepper to taste

In a large pot over medium high heat, brown the ground beef. Add onion, pepper, celery and garlic and cook over medium heat until just tender.
Add tomatoes, tomato sauce, water, jalapenos, chili powder, cayenne, and bay leaf. Bring to a boil then reduce to a simmer. Cook uncovered for 90 mins, stirring occasionally. Add cumin, kidney beans and salt and pepper to taste.
Cook 30 mins. Remove bay leaf before serving.
