Filippo Berio Marinated Chicken

2 lbs. skinless chicken breasts
2 tbsps. Filippo Berio olive oil
juice of 1 lemon
2 tbsps. pitted olives
4 rosemary sprigs pr 1 tsp. dried rosemary
1 bay leaf
1 tbsp. capers

Layer chicken breasts in a roasting pan. Combine remaining ingredients. Pour over chicken. Marinate in fridge for minimum of � hour, turning once.
Preheat oven to 400*F. Cook for 30 mins, or until juices are clear when chicken is pierced with a skewer at the thickest part. Garnush with your favorite vegetables.
