Cocktail Dates

12 large dried Medjool dates
4 oz. chunk parmesan cheese
6 slices bacon, cut in half across at the middle

Preheat oven to 350*F.
Insert a bamboo skewer or similar in the bottom of the date until the date rests against the pit, and push the pit out the stem end.
Cut the cheese into �-in. thick slices. Cut those slices into 1-in. long pieces, pencil thick.
Stuff a stick of cheese into the pit hole of each date. Wrap each date with a slice of bacon. Set dates on a baking sheet, bacon seam side down, and skewer each with a toothpick to hold the bacon in place.
Bake for 20 mins or until bacon is crispy. It is essential to let these cool for a few mins. before serving. They will be molten lava hot.
