Chinese Chicken Stir Fry

1 lb. of chicken breast, cut into thin slices boneless, skinless

1 tbsp. vegetable oil

� lb. carrots, peeled and diagonally sliced

1 yellow pepper, cut into thin strips

� lb. snow peas, trimmed

1 cup prepared stir-fry sauce

12 oz. rice vermicelli

Over medium heat in a large skillet cook chicken in oil until chicken is lightly browned on all sides. Add vegetables, cook and stir until vegetables are tender crisp. Add stir-fry sauce and cook for a further 2 to 3 mins until mixture is hot. Meanwhile cook vermicelli as directed on package. Serve.
