Chicken Strips with Plum Mustard Dipping Sauce

2 tbsps. vegetabel oil
� cup light mayonnaise
1 cup Cornflake crumbs or bread crumbs
12-16 boneless chicken breast fillets
salt and pepper to taste
� cup plum sauce (or honey mustard or bbq or sweet and sour)
2 tbsps. Dijon mustard, or to taste
3 tbsps. water

Preheat the oven to 375*F. Brush a non-stick or parchment-lined baking tray with the vegetable oil and set aside. Place the mayonnaise and crumbs in individual shallow bowls. Place the chicken in the bowl with the mayonnaise and toss to coat. Coat the chicken fillets in the crumbs. Place the chicken on the baking tray. Bake 10 mins, then turn the strips over and bake 5 to 0 mins more, or until just cooked through. While this occurs, combine the dipping sauce or choice, mustard and water in a small pot and warm over low heat. Divide the chicken among plates and serve bowls of the sauce alongside for dipping.
