CEDAR PLANK GRILLED SALMON

2 salmon fillets, each about 12oz. and 1-in. thick
4 tbsp. extra-virgin olive oil
4 tbsp. finely chopped shallots or red onion
1 lemon, cut in half
fresh dill sprigs
coarse salt
coarsley crushed black peppercorns

Soak overnight in water a plank of cedar large enough to hold 2 salmon fillets, rougly 8x12 in. Weight down with one or two cans of food to keep wood submerged.
Preheat grill to high.
Rub salmon fillet all over with extra-virgin olive oil. Top salmon with light sprinkling of finely chopped shallots or red onion and coarsley crushed black peppercorns.
Top each fillet with a few sprigs or fresh dill and squeeze a little fresh lemon juice over all.
Place plank on grill and sprinkle lightly with coarse salt. Heat with cover down for 2-3 mins or until the top of the plank is near dry. CAUTION: Keepa spray bottle nearby to douse flames in the event that the wood starts to burn.
Place salmon fillets on top of cedar. Turn heat to lowest setting.
Cook salmon with cover down for about 10-12 mins or until fish flakes.
Squeeze a little fresh lemon over salmon and serve.
