Cauliflower, Potato and Tomato Curry

1 tbsp. butter

1� tsps. cumin seeds

1 medium onion, coarsely chopped

� tsp. fresh ginger, finely chopped

2 tbsps. turmeric

1� tbsps. garam masala

1 tsp. hot chili power

a few black cardamom seeds

� tsp. cloves

2 tsps. garlic, finely chopped

2 large potatoes, peeled and cut into 1-in cubes

1 fresh cauliflower, cut into large florets

1-28oz can whole tomatoes

salt to taste

Fry onions and cumin seeds in butter until golden brown. Add the spices and garlic and cook for 2 mins. Add the potatoes, stir well and add enough water to just barely cover. Cover and cook for 15 mins. Remove the lid. Add the cauliflower and tomatoes. Stir well. Cover and continue cooking until everything is tender. Season with salt to taste. This dish should be served quite dry.
