Cabbage Braised in Cider

2 tbsps. canola oil
1 medium onion julienne sliced
2lb red cabbage, quartered, cored, thinly sliced
2 apples peeled, cored and cut into slices
� cup apple cider
1� tsp. blasamic vinegar or to taste
salt and ground pepper to taste
.
In a saucepan with the oil saute the onion until just golden. Add cabbage and saute until slightly wilted, stir frequently. Add the apples and the cider. Simmer covered for 10 mins or until the cabbage is tender. Remove cover and simmer until most of the liquid evaporates. Stir in vinegar and mix well. Add salt and pepper as desired.
