BROWN-EYED SUSANS

1¾ cups all-purpose flour

¼ Tsp. Salt

¾ cup vegetable shortening

½ cup granulated sugar

1 large egg

1 Tsp. Vanilla extract

7 oz. Milk chocolate, chopped

Combine the flour & salt. In a large bowl, cream the vegetable shortening & sugar. Beat in the egg. Beat in the vanilla extract. Gradually blend in the dry ingredients. Cover & chill for 1 hr. Preheat the oven to 400*. Melt the milk chocolate in the top ½ of a double boiler over low heat, stirring until smooth. Remove from the heat; keep warm over hot water. Break off small pieces of the dough & roll into balls. Place 1½" apart on ungreased baking sheets. Press your finger into the center of each ball to make a slight indentation. Bake for 8-10 mins, until lightly colored. Spoon a little of the melted milk chocolate into the center of each hot cookie & transfer to wire racks to cool.
