Basic Cauli-fried Rice

2 lbs. cauliflower, trimmed

4 tbsps. unsalted butter

2 garlic cloves, minced

1 tsp. sea salt

green onions, thinly sliced

Freshly ground black pepper

Grate the cauliflower, including core, using the medium holes or a grater. With your hands, squeeze out as much water as you can.

Melt butter in a frying pan over medium heat. Add garlic and saute until garlic sizzles. Add cauliflower, sprinkle with salt and stir-fry until tender-crisp, about 5 to 8 mins.

Stir in green onions and season to taste with pepper. Check seasonings and serve.
