Baked Acorn Squash

2 large acorn squash, washed and cut in ½ lengthwise, with seeds removed
salt and pepper to taste
1 small onion, grated
4 tbsps. brown sugar
4 tbsps. butter

Place the squash, cut side down, on a shallow baking dish and add ¼-in of hot water.
Bake at 350*F for 20 to 30 mins or until the squash is tender to the touch.
Drain any water left in the tray and turn squash over. Sprinkle each half with the salt, pepper, onion, sugar and butter.
Return the squash to the oven and bake for another 10 to 15 mins.
