| Turkey Goulash serving size 4 Ingredients 4 portions egg noodles (about 8 oz uncooked) 1 onion, chopped 1 red pepper, sliced 1 zucchini, sliced 4 portions lean ground turkey (about 1 lb) 2 cups tomato sauce 2 Tbsp fresh basil, chopped 2 Tbsp red wine, optional Directions 1) Prepare egg noodle according to package directions. 2) LIghtly coat a large skillet with cooking spray. Over medium heat, saute chopped onions for 2 mintues. Add bell pepper to onion and saute for another 2 minutes, Add zucchini and saute for 2 more mintues. Remove vegetable from the skillet and set aside. 3) Add ground turkey to skillet and saute until no longer pink, about 10 mintues. 4) When the ground turkey is done, return vegetable to the skillet. Add tomato sauce, basil and red wine. Cook, stirring occasionally, for 5 minutes. Serve and enjoy! |
