Italian-Style Turkey Burger

Servings 4

Ingredients

4 portions lean ground turkey breast (about 1 lb)
1/2 cup tomato sauce
1/2 cup fat-reduced parmesan cheese grated and divided in to 1/4's
1 Tbsp Italian Seasonings
2 tsp Dijon mustard
4 portabella mushrooms
2 tsp olive oil
4 Slices Italian bread
2 cups marinara sauce
4 slices reduced-fat provolone chees


Directions

1) Preheat broiler, also preheat grill.

2) In a medium mixing bowl, combine ground turkey, tomato sauce, 1/4 cup Parmesan cheese, Italian seasong and Dijon mustard.  Form Mixture into 4 portion patties.

3) Place turkey patties on hot grill and cook for about 6 mintues.  Turn and cook until no longer pink in the center, about 6 more minutes.

4) Clean mushrooms by wiping them with a damp cloth. Remove and discard stems.  Brush mushroom caps with olive oil.  Place on hot grill and cook for 2 minutes, turn and cook 2 more minutes.

5) Place Italian bread slices on a baking sheet and place under broiler until lightly toasted, about 3 minutes.

6) Top each toasted bread slice with a cooked turkey burger, a portabella mushroom, 1/2 cup marinara sauce and a slice of probolone.  Place under the broiler until cheese melts and sauce is warmed through, about three minutes.

7) Top each with about a tablespoon of Parmesan cheese,  Serve and enjoy
