      Roasted Potatoes

  This is a great side dish that pretty much takes care of itself once you pop it in the oven. If you don't have Italian dressing mix, try a dill dip mix, or really any other combination of spices that you might like. Customize it to fit your meal.

Ingredients:
4 large Yukon Gold potatoes
1 package Italian dressing mix
1/3 c. extra virgin olive oil
1 clove garlic, minced
1/2 tsp. lemon juice
salt and pepper to taste

  • clean and roughly chop potatoes. try to keep the potato chunks the same size
  • set oven to 450
  • combine olive oil, dressing mix, garlic, and lemon juice. mix well
  • add potatoes to olive oil mixture. mix until potatoes are evenly coated
  • put potato mixture in non-stick baking pan
  • bake 10 minutes
  • flip potatoes and continue baking for 10 more minutes or until golden and tender

Prep Time: about 3-5 minutes
Cook Time: about 15-30 minutes
