      Pasta w/Garlic Chicken Sauce

  This great new Italian inspired dish is both easy to make, rich and filling. Serve it alone or with a side salad and crusty Italian bread. Perfect for someone without a lot of time and with limited ingredients available.

Ingredients:
1 lb. boneless, skinless chicken breast
1/3 c. olive oil
3-5 large cloves garlic
1/4 tea. salt
1 jar tomato sauce, preferably garden vegetable
1 lb. pasta

  • cut chicken breast into 1" x 2" strips
  • slice garlic cloves thinly
  • heat olive oil in metal skillet
  • sauté garlic until golden
  • add chicken and salt
  • sauté chicken, with garlic, until golden; adding more olive oil as needed
  • remove chicken and garlic from pan
  • set oil aside in separate container, retaining 2 tbl. in pan
  • add tomato sauce, chicken and garlic to pan. simmer covered and add extra olive oil as desired
  • boil pasta as directed on box
  • strain pasta and serve with sauce immediately

Prep Time: about 15 minutes
Cook Time: about 15-30 minutes
Serves: about 2

The chicken appears dry when you remove it from the oil, but the tomato sauce livens it up again. The longer the sauce simmers, the more it becomes infused with the garlic and the chicken and the softer the chicken does become.
