      Enchiladas Sauce

  Ingredients:
3 tbs. vegetable oil
1 tbs. four
1/4 c. chili powder
16 oz. chicken stock
10 oz. tomato puree
1 tea. dried oregano
1/2 tea. cumin
2 tea. garlic powder

  • in saucepan heat vegetable oil. add flour and cook, whisking, 1 minute
  • add chili powder and cook 30 seconds
  • stir in stock, tomato puree, oregano, garlic powder and cumin and bring to a boil
  • reduce heat and simmer 15 minutes until flavors are well blended
  • season to taste

Prep Time: about 5 minutes
Cook Time: about 15-30 minutes
