Simple, simple, simple! The kind of thing you can whip up in a hurry when company unexpectedly shows up.
Ingredients:
1 loaf fresh Italian bread
2 large tomatoes or 8 plum tomatoes
1/3 c. extra virgin olive oil
3 cloves garlic
1 tsp. oregano
salt and pepper to taste
- mince the garlic and mix into olive oil. let sit while you prepare the rest
- set oven to 450
- slice loaf length-wise and brush with oil and garlic mixture. put in oven and bake until lightly toasted
- meanwhile roughly chop the tomatoes
- add tomatoes to remaining olive oil mixture and add oregano
- top toasted bread with tomato mixture and sprinkle with salt and pepper
- serve immediately while warm

Cook Time: about 2-5 minutes
