      Bruchetta

  Simple, simple, simple! The kind of thing you can whip up in a hurry when company unexpectedly shows up.

Ingredients:
1 loaf fresh Italian bread
2 large tomatoes or 8 plum tomatoes
1/3 c. extra virgin olive oil
3 cloves garlic
1 tsp. oregano
salt and pepper to taste

  • mince the garlic and mix into olive oil. let sit while you prepare the rest
  • set oven to 450
  • slice loaf length-wise and brush with oil and garlic mixture. put in oven and bake until lightly toasted
  • meanwhile roughly chop the tomatoes
  • add tomatoes to remaining olive oil mixture and add oregano
  • top toasted bread with tomato mixture and sprinkle with salt and pepper
  • serve immediately while warm

Prep Time: about 2-3 minutes
Cook Time: about 2-5 minutes
