This is about 6 or 7 hours into the cook. Notice how the chimney also works as a handy-dandy trouble light holder for those late night cooks! (This picture was actually taken around 5:30 pm... that light WAS on late that night!) The butts were really dark but not quite as dark as the picture shows (color shift apparently.)
I was up until the wee hours of the morning by the time these butts were up to temp and then rested and were pulled... oh.. that piece of bark that's missing.. uh don't mind that, it must've gotten knocked loose while I was rotating the butts around... well sure, it tasted phenominal but... ooops! The color is a little closer in this picture.

This meat was for Christmas Eve at my parents house, I took a 5 quart plastic bucket full of pulled pork and came home with an empty, washed bucket! (That was compliment enough I think!)
Cooking on the Modified SnP
My first major cook in my modified SnP. Here I have the 6 pork butts layed out (Q'd up as it were!) the way I was going to place them in the cooker. These butts ranged from around 5 lbs to around 8 lbs. At this point, I was nervous that they wouldn't all fit! These had been in the fridge overnight with Southern Succor rub.

Cooking away nicely here. Much better color accuracy on this picture (I think the sunlight vs flash makes a big difference.)

Total for this Banquet, I had planned on 125 people (adults and children) so I planned to start with 60 to 65 lbs of butt, as it turns out, I started with 69 lbs between the 2 cooks. After all that, we ended up with 75 people. We sold leftovers and I also gave a few portions away to a couple special guests that were in attendance. All in all, a very big success, I received many compliments and we sold everything we didn't eat!
These are the 3 cryovacs of butts I bought to cook for our Cub Scout Blue and Gold Banquet (actually this is the first installment of 6 butts, there were 6 more to come later!) Other than splitting a half beef or splitting a hog with my folks, I think that this was the most meat I've ever bought at one time! (If I remember right, this was 37 lbs of butt.)
