This is such a simple, but rich casserole to throw together.

6-8 chicken breasts; cooked and cut into pieces
2 cans cream chicken soup
2 c sour cream
1 small can Durkee French Fried Onions
2 strips Ritz crackers, crushed
1-2 cups of grated cheese (optional)
� c butter, melted

Heat oven to 375° F. Place chicken in buttered 9x13 dish. Sprinkle onions over chicken.
Mix sour cream and soup together, season to taste, and pour over chicken.
Sprinkle with crackers in an even layer. Pour melted butter over the top and bake 30-45 minutes; until bubbly.
