| Welcome to my Thanksgiving page. I have included a few recipes that are very special to my family's celebration. There are also some links to some great recipe sites on the web. Enjoy and have a great holiday! |
| Roasted Turkey Breast 1 (6-7lb) frozen turkey breast salt, pepper, seasonings 3 ribs celery, coarsely chopped 1 can chicken broth 3-4 carrots, coarsely chopped 1 can cream of mushroom soup 1 small onion, cut into wedges 1 can cream of celery soup Heat oven to 350 degrees. Place turkey in shallow roasting pan ("meaty" side down). Season as desired (I use salt, pepper, thyme, and rosemary). Place celery, carrots, and onion around turkey, and pour in 1 cup of broth. Bake uncovered for one hour. Reduce heat to 250 degrees, and bake 3 more hours basting with additional broth if pan gets dry. Breast is done when internal temperature is 160 degrees. Remove turkey to carving board and deglaze pan. Strain drippings into saucepan and bring to a simmer. Stir in soups and heat through. This was so moist, we did not even use the gravy! |
| Sweet Potato Casserole 3 cups hot sweet potatoes 3/4 cup brown sugar 1/2 cup sugar 4 Tbsp flour 1 cup flaked coconut 1/2 stick melted butter 1 tsp vanilla 1/2 cup chopped pecans 2 eggs 1/2 stick of butter Mix left hand ingredients together and put in baking dish. Mix flour and brown sugar together, then melted butter and pecans. Spread over potato mixture. Bake at 350 degrees for 30 min. This is more like a dessert really, but we serve it with the main meal. |
| Libby's Pumpkin Cheesecake Crust: Combine 1 1/2 cups graham cracker crumbs, 1/4 cup sugar, and 1/3 cup melted butter or margarine in medium bowl. Press into bottom and one inch up the sides of a 9 inch springform pan. Bake at 350 degrees for 6-7 minutes (do not brown). Cool. 3 (8 oz) pkgs cream cheese 2/3 cup evaporated milk 1 cup sugar 2 Tbsp cornstarch 1/4 cup packed brown sugar 1/4 tsp ground cinnamon 1 (16 oz) can solid pack pumpkin 1/2 tsp ground nutmeg 2 eggs Beat cream cheese and sugars in larger mixer bowl until fluffy. Beat in pumpkin, eggs, and evaporated milk. Add cornstarch, cinnamon and nutmeg, beat well. Pour into crust. Bake at 350 degrees for 55-60 minutes or until edges are set. Cool, chill overnight. Top with whipped cream. |
