| Spinach Cheese Calzones 1/2 cup chopped onion 1 tsp dried Italian seasoning 1 Tbsp garlic powder 1 (15 oz) carton ricotta cheese 1/2 tsp salt 1 cup shredded mozzarella cheese 1 (10 oz) pkg frozen chopped 1/4 cup freshly grated Parmesan spinach, thawed & drained 1 (16 oz) pkg loaf frozen bread 1/2 (6 oz) pkg Canadian bacon, dough, thawed chopped 1 (27 1/2 oz) jar pasta sauce, heated Combine first 5 ingredients in large skillet over medium-high, heat, stirring constantly, until bacon is browned. Remove from heat. Combine Italian seasoning and next three ingredients; stir into spinach mixture. Divide dough into 8 portions; roll each portion into a 6 inch circle on a lightly floured surface. Spoon about 1/2 cup spinach mixture onto each circle; lightly brush edges of dough with water. Fold in half, pressing edges to seal. Place calzones on a baking sheet coated with cooking spray; coat tops with cooking spray. Bake at 375 degrees for 15 to 20 minutes or until golden. Serve with warm pasta sauce. Yield: 8 servings These are a wonderful adaptation. Of course, the best one I ever ate was in this wonderul, little restaurant in Catania, Sicily! |
| Stuffed Shells/Manicotti 1 box jumbo shells or manicotti 1 (10 oz) pkg frozen chopped spinach 1/2 lb mozzerlla cheese, shredded 1/2 cup grated Parmesan cheese 2 lbs ricotta cheese 2 eggs dried Italian seasoning, cracked black pepper, salt, garlic, parsley, spaghetti sauce Thaw and drain spinach. Mix thoroughly and season well. Fill shells or manicotti. Place in greased 9x13 inch pan. Cover with spagetti sauce. Top with additional mozzarella and Parmesan cheeses. Bake at 350 degrees for 30 min. |
