| Beef With Broccoli 1/2 lb broccoli 1 1/2 Tbsp soy sauce 8 oz sm whole mushrooms 1/2 tsp salt 1 sm red bell pepper, thinly sliced 1 Tbsp dry sherry 1 lb beef, cut thinly lengthwise 1/3 cup oil, divided 1 egg white 1 clove minced garlic 1 Tbsp cornstarch chopped green onions to garnish Sauce: 1/2 cup oyster sauce 1 Tbsp dry sherry 1 Tbsp sesame seed oil pinch of sugar 1 to 1 1/2 Tbsp soy sauce Cornstarch solution (1/3 cornstarch to 2/3 water) Marinate the beef in egg white, cornstarch, soy sauce, salt, and sherry. Set aside for 10 minutes. Blanch the broccoli for 3 minutes; set aside. Heat 1/4 cup of oil in wok or pan and stir fry beef (about 25 sec according to recipe, but I have to do it until it is no longer pink!). Remove and drain. Heat 3 Tbsp remaining oil and heat broccoli, bell pepper, and mushrooms with garlic until heated through and coated with oil. Return beef and then add the sauce ingredients. Heat through. Thicken with cornstarch solution as desired. I added the bell pepper and mushrooms to this recipe. One fun thing about it is that you can use any combination of vegetables and meat that you want. |
