The Kitchen

One of my favorite recipes is for oatcakes. The rest of my family (except, they avow, the ones who don't know any better) thinks that I must be tweaked. I suppose it all comes from reading too much George MacDonald...


Oatcakes
Oven 375
1 cup fine (pinhead) oatmeal (use a hand grinder or a blender)
1/2 tsp baking soda
pinch salt
2 Tbsp melted butter
Hot water to make dough (about 1/2 cup)
Extra oatmeal for rolling
Mix oatmeal, soda and salt. Add butter and water. Stir well. Sprinkle extra oatmeal on a board. Form the dough into a round and roll it out thinly (about 1/4 to 1/8 of an inch) adding oatmeal to the surface as necessary to prevent sticking. Brush off excess. Cut dough into 6 or 8 pieces, place on ungreased baking sheet. Bake for 15-20 minutes. Cool on a wire rack, eat while warm with cheese. Color may be from pale fawn to green.

...Just happened to notice...what kind of flowers do those on the teapot look like? Hmmm?...
