On
Tuesday, Thursday and Saturday mornings; 6:00
a.m. and sometimes earlier, the
bustle of the vendors can be heard as they
set up their stalls
. As the morning rolls onward, the vendors' vehicles pull up to
their designated spots; vans
and trucks swollen and artfully packed with produce..
Late comers coyly nestle in, watching (and being watched) as they
carefully edge in to their spots, being careful not to upset anyone’s
display. Poles can be heard clattering to the ground and the occaisonal
loud sail-flap of canvas as the wind gusts across the square.
Canopies set up, the tables are unfolded and set out, and buckets
are filled with water to keep produce fresh. Fruits and vegetables
are carefully polished and lined up in their baskets and placed
upon display. The weather is watched closely by the vendors and
extra weights for canopies are distributed to those that may not
have planned for a windy day. On
the days that the market is not operating, the vendors harvest
crops and and sometimes supplement their stock with produce from
other suppliers.
