Strawberry Shortcake
Ingredients:
3 cups self-rising flour
1 tbsp. sugar
1/2 cup butter or margarine
1 cup milk
2 pints strawberries, sliced
1/3 cup sugar
1 cup heavy cream, whipped with 1 tbsp. sugar and 1 tsp. vanilla
Oven Temp: 450 degrees F.
Preheat oven to given temperature.
Sift together flour and 1 tbsp. sugar in a large bowl.
Cut in butter.
Add milk and stir until blended.
Knead dough briefly on a floured surface and roll out to 1/4 inch thick.
Cut into 10 to 12 four inch rounds and place on ungreased cookie sheet.
Brush tops with 1/4 cup melted butter.
Bake 20 minutes or until golden.
Combine berries and 1/3 cup sugar.
For each serving...
split a shortcake
mound with berries
top with other half of shortcake
mound with berries
and top with a large dollop of whipped cream.
Strawberries and Cream Cake
Ingredients:
1 box SuperMoist white cake mix
1 package (0.14 ounce) strawberry-flavored unsweetened soft drink mix
3/4 cup water
3 eggs (including yolks)
1 package (10 ounces) frozen sliced strawberries, thawed and undrained
Heat oven to 350�F.
Grease bottom only of rectangular pan, 13x9x2 inches, with shortening; lightly flour.
In large bowl, beat cake mix, drink mix (dry), water, eggs and strawberries with electric mixer on low speed 30 seconds.
Beat on medium speed 2 minutes.
Pour into pan.
Bake 30 to 35 minutes or until toothpick inserted in center of cake comes out clean.
Run knife around sides of pan to loosen cake.
Cool completely, about 1 hour.
Frost cake with Whipped Cream Cheese Frosting.
Store covered in refrigerator.
Whipped Cream Cheese Frosting
Ingredients:
1 package (3 ounces) cream cheese, softened
1 tablespoon milk
2 cups whipping (heavy) cream
2/3 cup powdered sugar
In chilled large bowl, beat cream cheese and milk on low speed until smooth.
Beat in whipping cream and powdered sugar on high speed, scraping bowl occasionally, until soft peaks form.
Strawberry Pie
Ingredients:
1 quart of strawberries
1/2 pkg. of (wild strawberry jello) "the wild works best"
2 tablespoons of cornstarch
1 cup of sugar
1 cup of hot water
1 pre-baked pie shell
Mix all dry ingredients together
Add cup of hot water and cook over low heat till it comes to a boil and thickens (stirring constantly)
Clean and slice berries in half, place in pie shell.
Pour mixture over berries.
Chill in refrigerator for 3-4 hours
THEN ENJOY, IT'S BERRY DELICIOUS!!
Chocolate/Strawberry French Toast
Ingredients:
2 slices of day-old French bread
1 1/2 ounces miniature chocolate chips
1/4 cup strawberry preserves
2 tablespoons softened cream cheese
2 eggs, lightly beaten
1/4 cup milk
grated zest of 1 orange
1/4 cup sugar
1/2 teaspoon vanilla extract
dash of cinnamon
Cut through each slice of bread horizontally to form a pocket, not cutting all the way through.
Stuff half of the chocolate chips & half of the strawberry preserves into each pocket along with one tablespoon of softened cream cheese.
In a shallow bowl, whisk together the eggs, milk, sugar, vanilla & cinnamon.
Add the filled bread & allow to soak for 5-10 minutes.
In a heavy skillet or griddle, heat butter until the foam subsides.
Add bread, turning frequently until crisp & golden.
Transfer to heated places & dust with powdered sugar.
Serve w/Mandarin/Strawberry Sauce.
Mandarin/Strawberry Sauce
Ingredients:
1 cup strawberry preserves
1/4 cup apricot preserves
1 small can mandarin oranges, drained
1/4 cup butter, melted
Combine all ingredients & stir over low heat until well blended.
Serves 2.
Strawberry Milk Shake
Ingredients:
2 cups Vanilla ice cream (1 pint)
1 cup Milk
1 10 oz., package frozen strawberries (thawed but undrained)
Place vanilla ice cream in a blender container
Add milk and the thawed strawberries.
Cover; blend till mixture is smooth.
Pour into glasses. Serve immediately.
Makes about 2 (8oz.) servings.
Strawberry Slush
Ingredients:
1 large can pineapple juice
1 pkg. orange Kool Aide
2 pkg. strawberry Kool Aide
3 cups sugar
2 quart water
1 quart gingerale
l/3 cup Real Lemon
3 ripe bananas
l quart strawberries
Mix first 7 ingredients together.
Puree strawberries & bananas in blender.
Add to other ingredients.
Freeze in several containers or plastic freezer bags.
When ready to use half thaw and add 7Up, Sprite or Mountain Dew to make a slush.
(Three frozen quart sized bags of slush and 1 litre Sprite will fill a punch bowl)
Guaranteed delicious!!
Basic Strawberry Frappe
Half-fill tall glass with washed, sliced, fresh strawberries.
Add milk (low-fat or whole) just enough to cover berries.
Add sugar (or sugar substitute) +/- 1 tsp.
Blend in glass with wand-type hand blender
on fairly high speed, until all lumps are gone and glass has "filled up".
Serve immediately.
Strawberry Measurement Equivalents
1 quart weighs about 1-1/4 to 1-1/2 pounds and will yield 4-5 servings.
8 quarts weighs 12 pounds and is eaqul to 13 pints frozen.
1-1/2 quarts is needed for a 9" pie.
1 cup sliced fresh berries is eaqul to one 10 oz. package of frozen, sweetened, berries.
