Roast Pineapple, Pablano & Tomato Relish

Ingredients:

  • 1/2 cup cubed pineapple
  • 1/4 cup pablano pepper, diced
  • 1/4 cup tomato, diced
  • 1/4 cup red onion
  • 1 tbsp. Cilanto-chopped
  • 1/4 cup honey
  • 1/4 cup rum
  • 1/4 cup brown sugar

Preparation:

Mix pineapple, rum, brown sugar & butter together.
Bake in oven at 400 degrees for 10 minutes.
Remove and let cool to room temperature.
Add the rest of the ingredients into the pineapple mixture.
Refrigerate.
