MANDARIN FRUIT SALAD

Ingredients:

    Salad:
  • 24oz jar Mandarin Orange slices in light syrup
  • 1/2 fresh Pineapple
  • 2 large Bananas
  • 2/3cup Golden Raisins
  • 2Tbs lemon juice
    Marinade:
  • 1cup Mandarin orange syrup
  • 1/2cup Honey
  • 1/3cup brown sugar
  • 1/2tsp ginger
  • 1/2tsp cinnamon
  • 1tsp lemon zest

Peparation:

Salad:
Drain the mandarin slices, saving the 1 cup of the syrup.
Prepare the marinade.
Core and remove the skin from the pineapple half. Slice then cut into small wedges.
Peel and slice bananas.

Combine: mandarin, pineapple, banana, and raisins in a large bowl,
add lemon juice and stir gently.
Pour marinade over salad and mix just until coated.

Refridgerate covered 20 minutes minimum to allow fruit to thouroughly marinade.
Serve chilled.

Marinade:
In medium bowl, wisk together all ingredients until well blended.
Allow to rest 5 minutes.
Wisk briskly 1 minute.

Serves: 6 - 8
