French Onion Soup

Ingredients:

  • 4 tablespoons butter
  • 2 pounds onions, sliced
  • 1 teaspoon sugar
  • 1 tablespoon flour
  • 1/2 cup red wine, optional
  • 6 cups beef broth
  • 1 French loaf, cut into 1/2 inch slices and toasted
  • 8 ounces grated Swiss cheese

Peparation:

Melt the butter in a large soup pot and add the sliced onions and sugar.
Cook the onions for about 25 minutes, stirring occasionally.
Sprinkle with the flour and cook for about 1 minute, then add the red wine and broth.
Continue to cook for about 20 minutes more to allow the flavors to blend.
Ladle the soup into 4 ovenproof bowls and place a round of toasted bread on each.
Sprinkle the grated Swiss on the bread round and place the bowls under the broiler until the cheese is melted and bubbling.
