Bruschetta Alla Treccione

Ingredients:

  • 4 each slices Cisbatta
  • 4 oz. roasted garlic puree
  • 4 oz. Treccione (smoked Mozzarella)
  • 2 each med. portabella mushroom (cleaned and grilled)
  • 4 each oven dried tomatoes
  • 1 med. sweet onion grilled
  • 1/2 oz. fresh basil
  • salt and pepper
  • good olive oil
  • balsamic vinegar

Peparation:

Start by chopping up grilled onion, portabella mushrooms and oven dried tomato. Place in a bowl together. Next, season with a little balsamic vinegar, olive oil and salt and pepper. Set aside. Next, drizzle olive oil on the sliced bread and grill until good marks have formed. Next, brush with roasted garlic puree and top with the smoked mozzarella and place in oven to melt cheese. Remove from oven and cut in half arranges on the plate and top with mushroom salad drizzle with olive oil and garnish with basil.
