Apple and Prosciutto Crostini

Ingredients:

  • 1 French bread baguette, cut into 24 slices
  • 3 T olive oil
  • 1 clove garlic
  • � t minced fresh thyme
  • 2 T minced fresh chives
  • 5 oz chevre, softened
  • 2 T heavy cream
  • � t freshly ground pepper
  • � lb very thinly sliced prosciutto, minced
  • 1 Fuji apple, cored and very thinly sliced

Peparation:

Preheat oven to 450 degrees.

Brush both sides of bread with olive oil. Heat grill pan over medium high heat. Grill bread on both sides until golden brown. Set aside. (Can be made two days in advance, kept in air tight container.)

Place garlic, thyme and chives in mini processor and pulse until minced. Add chevre, cream and pepper. Pulse several times to blend herbs and cheese; set aside. Can be made day ahead covered in refrigerator. Bring to room temperature before assembling appetizer.

Divide prosciutto over grilled bread slices. Place one apple slice over prosciutto. Spoon one level teaspoon of cheese mixture in center of the apple slice.

Place bread slices on baking sheet and bake in hot oven for 5 minutes or until just heated through.
