| Faux Pumpkin Bars |
| 1 box of angelfood cake mix~one step kind 15 oz can of pumpkin 1 cup of water 1 tablespoon of pumpkin pie spices 1 tablespoon of cinnamon 4 oz fat free cream cheese 1/4 cup powdered sugar 1 teaspoon white vanilla small pkg. chopped pecans 1 tub of fat free Cool Whip Mix, with a wooden spoon, first 5 ingredients together in a large bowl. Pour into a sprayed 9x13 pan. Bake at 350 for 30-35 minutes. Let cool completely. ~For frosting~ Beat cream cheese until smooth. Add powdered sugar and vanilla and beat until smooth. Fold in Cool Whip. Frost top of cake, then spinkle with pecans. Serves 12 |
| Honey Pecan Crusted Chicken |
| 1/4 teaspoon salt 1/4 teaspoon pepper 4 (6-ounce) skinned chicken breast halves 8 (4-ounce) chicken drumsticks, skinned 1/4 cup honey 2 tablespoons Dijon mustard 3/4 teaspoon paprika 1/8 teaspoon garlic powder 1-1/4 cups finely crushed cornflakes (about 4 cups uncrushed cereal) 1/2 cup finely chopped pecans Cooking spray 1. Preheat oven to 400 degrees. 2. Sprinkle salt and pepper evenly over chicken; set aside. Combine honey, mustard, paprika, and garlic powder in a small bowl; stir well. Combine cornflakes and pecans in a shallow dish; stir well. Brush both sides of chicken with honey mixture; dredge in cornflake mixture. 3. Place chicken pieces on a large baking sheet coated with cooking spray. Lightly coat chicken with cooking spray, and bake at 400 degrees for 40 minutes or until done. Yield: 8 servings. | Package of reduced fat biscuits or crescent rolls 1 lb lean ground beef 2 tablespoons green pepper, chopped 8 oz mozzarella cheese (Healthy Choice) 6oz can of tomato paste (I use the one with herbs, tastes better) 1 can of water 1 pkg taco seasoning mix Press biscuit dough into a sprayed pie pan, covering the bottom and sides. Brown meat and drain. Add all ingredients, except cheese. Layer 1/2 meat mixture, 1/2 cheese mixture. Repeat. Bake at 400 degrees for 15 minutes. Serves 8. |
