| Fried Green Tomatoes 4 - Med. green tomatoes 2 - cups all purpose flour 1 - cup corn meal salt & pepper (to taste) onion powder (to taste) chili powder (to taste) 2 - tablespoons shortening 1 - egg, lightly beaten splash of milk In a medium bowl, beat egg and add splash of milk. In large bowl combine flour, corn meal, salt & pepper, onion powder and chili powder. Dip sliced tomatoes into egg mixture and then into dry mixute, generously coat tomatoes. In hot skillet carefully place tomato slices, brown on side before turning them over. Brown both sides and remove from skillet onto a rack or paper towel covered platter. |

| Harvard Beets 1 can (1 pound) sliced beets 3 tablespoons sugar 2 teaspoons cornstarch 1/2 teaspoon salt 1/4 cup apple cider vinegar 1 tablespoon butter Drain beets, reserving 1/4 cup liquid. Combine sugar, cornstarch and salt; stir in vinegar and beet juice. Cook over low heat, stirring constantly until clear and thickened. Stir in butter and beets then heat. |
