Quick Tomato Mac 'n' Beef

Ingredients:
1 pound ground beef
1 cup chopped onionsalt and pepper to taste
1 can (14-1/2 ounces) Del Monte diced Tomatoes with garlic & onion, undrained
1 cup water
1 cup (4 ounces) uncooked elbow macaroni
1 cup (4 ounces) shredded cheddar cheeseGreen onion tassels and sour cream, optional

Directions:
In a large skillet, cook beef and onion until beef is no longer pink; drain. Season with salt and pepper. Add tomatoes and water; bring to a boil. Stir in macaroni. Cover and simmer 10 minutes or until macaroni is cooked. Stir in cheese. Garnish with green onion and sour cream if desired.

Preparation Time: 30 mins. or fewer
Easy Shepherd's Pie

1 pound lean ground beef
1 can (14.5 oz) Del Monte Diced Tomatoes with Garlic & Onion
1 can (8 oz) Del Monte Tomato Sauce
1 can 914.4 oz) Del Monte Mixed Vegetables, drained
salt and pepper, optional
Instant Mashed Potatoes flakes (enough for i6 servings)
Butter
Milk

Brown meat in skillet over medium-high heat; drain.  Add tomatoes and tomato sauce; cook over high heat until thickened, stirring frequently.  Stir in vegetables.  Season with salt and pepper, if desired.  Spoon into 2-quart baking dish; set aside.  Prepare 6 servings mashed potatoes according to package directions with specified amount of butter and milk.  Top mixture with potatoes.  Bake at 375�, 20 minutes or until heated through.

Prep/cook time: 30 minutes
Serves 4-6
