Peanut Butter and Chocolate Kisses
1/2 cup butter or margarine
1/2 cup peanut butter
3/4 cup packed brown sugar
1/4 cup granulated sugar
1 egg
1 teaspoon vanilla
1/4 teaspoon salt
1 3/4 cups flour
1 teaspoon baking soda
3 tablespoons granulated sugar
48 chocolate kisses (or maple buds)
Beat together butter, peanut butter, brown sugar, 1/4 cup granulated sugar, egg, vanilla and salt till fluffy. Add flour and soda. Shape dough into balls and roll balls in 3 tablespoons granulated sugar. Bake 8 to 10 minutes until brown. Immediately top each cookie with a chocolate kiss and press down firmly.
Note: The recipe calls for you to bake the balls and then top with a chocolate kiss. I found that the baked balls cracked badly. Instead I placed the balls into miniature cupcake tins as shown in the photos, and baked them in the tins and then topped each cookie with a chocolate kiss. Much better results this way I found.
