Oatmeal Jam Sandwich Cookie
3/4 cup butter
1 cup brown sugar
1/2 cup granulated sugar
1 egg
2 tablespoons water
2 teaspoons vanilla
2/3 cup flour
3/4 teaspoon baking soda
1/2 teaspoon cinnamon
3 cups rolled oats
Jam
Cream butter, sugars, egg, water and vanilla together till light and fluffy. Combine flour, baking soda and cinnamon. Add to creamed mixture, beat till blended. Drop by small spoonfuls on greased cookie sheet and bake at 350 degrees for 10 minutes. Put 2 together with jam. (Note: I don't use the drop method. I roll the dough 1/4 inch thick and cut with small cookie cutter).
