Lemon Chip Cookies
1 cup butter
1 cup sugar
1 egg
1 1/2 teaspoons grated lemon rind
1 tablespoon lemon juice
1 tablespoon water
2/3 cup flour
1/4 teaspoon salt
1 oz chocolate sprinkles
Cream butter and sugar. Beat in egg, lemon rind, lemon juice and water. Stir in dry ingredients and chocolate sprinkles.
Make into rolls and chill. Slice and bake at 375 degrees for 10 to 12 minutes
Note: I like to freeze rather than just chill. It makes it easier to cut when frozen.
