Hockey Pucks (Schokoladecreme Tortchen)
This one is in metric because it's a German recipe
250grams flour
2 level teaspoons baking powder
140 grams butter
70 grams ground hazelnuts
90 grams sugar
1 package vanilla sugar
1 egg
Sift flour and baking powder. Cut in the butter as for pastry, then add nuts, sugar, vanilla sugar and egg, and quickly knead to a smooth dough. Roll dough thin, and run over with a meat tenderizer roller to prevent bubbles, cut circles with a small cookie cutter. (If you want them hockey puck size, then use a big circle cookie cutter.) Bake at 375 degrees till slightly brown.
Cream Filling
200 grams butter
120 grams icing sugar
3 level teaspoons cocoa (or 2 oz. bakers chocolate)
1 teaspoon rum
Glaze
100 grams icing sugar
2 level teaspoons cocoa
1 1/2 tablespoons hot water
Blend all ingredients together
Ice one third of circles with glaze. Let dry thoroughly. Ice remaining circles with cream filling. Put 3 together with one glazed one on the top. Ice around edges with cream filling and coat with ground hazelnuts
