Nut Granola Bars

In a large bowl combine

1 tablespoon brewer's yeast

1/4 cup each of all the following:

wheat germ bran - All Bran - Bran Buds

soy bean flakes - soy protein - soy grits

wheat flakes

rye flakes

oatmeal

oat bran

peanuts        (All nuts unsalted and chopped not to fine)

pistachios

mandaloma nuts (from health food stores)

almonds

filberts

brazils

cashews

walnuts

pecans

flax seed

sunflower seed

cocoanut (flaked or ribbon or both)

sesame seeds

pumpkin seeds

poppy seeds (boil in the syrup and they won't be gritty)

any dried fruits (raisins, currants, dates,etc)

You can add, subtract or substitute any of these ingredients, and start out with small amounts i.e., 1/4 cup of each, and add more if needed. You must add some rice krispies, puffed rice, puffed millet or some such cereal or it will be too hard to cut. Add enough cereal to make up 9 to 10 cups of mixture.

 

Line 12" X 18" pan with foil and spray with Pam.

 

Syrup

2 cups corn syrup

3/4 cups sugar

1/4 lb. margarine

1/2 cup peanut butter (optional)

Boil syrup, sugar and margarine to a little less than soft ball stage, remove from heat and stir in peanut butter. Pour over nut cereal mixture and stir until completely coated. Spread evenly in pan and bake in 400 degree oven till syrup starts to bubble again, no more than ten minutes. Remove from oven, cover with plastic and roll with rolling pin until nice and solid. Let cool and cut into bars. Wrap and keep in covered container so they don't get dry and hard.
