Butter Cookies and Chocolate Cookies

Butter Cookies

1 cup butter 

1 cup sugar

2 large eggs

3 cups flour

1 teaspoon grated lemon rind

Preheat oven to 325 degrees

Cream butter, add sugar gradually. Blend until very light and creamy; beat in eggs. Add flour and grated rind. Stir until blended.

Spray mold with Pam. Press dough into mold. Bake 3 to 3 1/2 minutes until edges are slightly golden. Remove from molds while hot.

I make this and the chocolate cookies as sandwich cookies. Put two cookies together with approximately i teaspoon of the filling

1/4 lb. butter

1 teaspoon lemon rind

2 egg yolks

2 heaping tablespoons flour

3/4 cup whipping cream

1/2 lb icing sugar (more if needed)

Chocolate Cookies 

1 3/4 cups butter or margarine softened

3/4 cup sugar

2/3 cup brown sugar

1/2 teaspoon salt

2 large eggs

3 cups flour

3/4 cup unsweetened chocolate 

1/2 teaspoon baking soda

Preheat oven to 325 degrees

Beat butter, white and brown sugars and slat in large mixer bowl at medium high speed until light and fluffy. Add eggs, one at a time beating well after each addition.

Sift together flour, cocoa  powder and soda. Add flour mixture gradually and beat well.

Chocolate Filling

1/4 lb. butter

1/4 lb. cocoa

2 egg yolks

2 heaping tablespoons flour

1 cup whipping cream

1/2 lb icing sugar (more if needed)
