MELISSA’S TANDOORI CHICKEN

1 chicken breast per person
Sunsweet orange flavoured prunes
Rindless streaky bacon
Garlic
Orange juice

Thin chicken breasts by cutting in ½ on the flat and then flatten a little more with a meat tenderizer.  Put a prune into the middle,  wrap chicken around prune and bacon around both.  Secure with a toothpick.  Bake in a hot oven, grill or bbq.  Turn frequently until bacon and chicken are cooked.  Baste with OJ while cooking

SAUCE

500g sour cream or natural yoghurt
3 tsp prepared tandoori paste
grated rind of 2 oranges
3 tbsp chopped parsley
3 tbsp chopped fresh coriander

mix all together, cover and chill for atleast an hour….over night if possible
