Cut up large cucumbers in to a bowl and sprinkle with salt and leave for a few hours or even over night.  Squeeze out the juice of the cucumbers.

DRESSING:

300ml Cream
1 Dtsp Sugar
1 Tsp acetic acid

Mix together and pour over cucumbers.  Don’t be tempted to add more acid or sugar until tasted
