4 C peeled and cubed pumpkin
3 tbsp Olive Oil
1 tsp Ground Cinnamon
1 tsp Crushed Garlic (2-3 cloves)
250g Feta Cheese
Salt and freshly Ground Black Pepper
1 Red Onion chopped
½ C finely chopped Basil Leaves
½ C Pumpkin Seeds (toasted)
Dressing
1 ½ C Olive oil
1 tbsp Balsamic vinegar
¼ C white wine vinegar
1 tsp whole grain mustard
Method
Place pumpkin on an oven tray or roasting dish. Drizzle with olive
oil. Sprinkle with garlic, cinnamon, salt and pepper. Roast
@ 200ºc. for approx 20 minutes until cooked thru. Place pumpkin
in a salad bowl and toss thru other ingredients. Mix all the dressing
in a blender or screw top jar and drizzle over salad
