4 bananas
2-3 tbsp butter, softened
4 tbsp brown sugar
4 tsp orange rind
2 tbsp rum or orange juice
Cream or crème fraiche or plain yoghurt for garnish
Place the bananas in their skins on the hot barbecue and leave for 6-8
mins, turning
occasionally, until they turn brownish-black in colour. Mix the butter,
brown sugar,
orange rind and orange juice or rum together and reserve. Place the cooked
bananas
(still in their skins) into individual dessert bowls. Using a sharp knife,
slit the skin open
and open out enough to add a little of the flavoured butter.Serve immediately.

You can also cook bananas on the BBQ in a similar way - by either placing
peeled
bananas with the ingredients above in a tin foil packet or heating butter
and
brown sugar in a fry-pan on the grill, place the bananas in the pan and
top with
orange rind and juice or rum.
