BANANA & KUMARA SALAD

900g Kumara
2 Bananas
1/4c chopped peanuts
2 spring onions
 

Method

Cut kumara in to 1cm squares, boil until softened. Drain.  Mix kumara, banana, onion & peanuts, and pour over dressing.
 

DRESSING

1 Tbsp. lemon rind
2 Tbsp. lemon juice
2 Tbsp oil
1 Tbsp sugar.
