Ann's Killer Chili

This is one of our favorites and this recipe originally came from Arizona
when my sister moved back here from there.  Good for any night, whether
it be hot or cold outside.

  1. 1 pound ground beef

  2. 1 large green pepper

  3. 1 medium to large onion

  4. 1 16 ounce can of stewed tomatoes

  5. 1 16 ounce can of Hot Chili Beans (Wegman's brand is the best if you live near a Wegmans)

  6. Dry Yellow Mustard

  7. Red Pepper

  8. 1 10 ounce package of Sharp or Extra sharp Cheddar Cheese

Place Ground beef in large pot (2-3 quart at least) and put on low heat.  Cook until all pink is gone.
Remove from heat and drain meat.    Chop both the green pepper and onion into small pieces and
place in pot with cooked ground beef.  Mix well.  Add tomatoes and chili beans.  Add yellow mustard
and red pepper depending on how hot you like it.  Add lots if you like it hot and a few dashes if you like
it mild.  Mix well.  Place on simmer and cook for about 1 hour.  Grate cheese.  Add cheese after mixture
has cooked for 1 hour.   The more cheese you add the thicker the chili will be.  Serve with bread,
flour tortillas or corn tortillas.

American Fondue

This is an old family favorite that my mom used to make as a treat some nights, especially
on New Years Eve.  Keith and I enjoy this some evenings as a fast filling dinner, that is also meatless.  A fondue pot isn't necessary, we used to use a regular pot to serve it in. 
The fondue pot is fun, though with those long forks that it comes with.

  1. 1 envelope Lipton Onion Soup Mix

  2. 2 cups  tomato juice

  3. 4 teaspoons lemon juice

  4. 1 pound American cheese, shredded (4 cups)

  5. French, Italian, or Rye Bread cut into small bite sized pieces

In medium sauce pan, combine Lipton onion soup mix, tomato juice, and lemon juice; heat slowly.
When juice begins to simmer, add a small portion of the cheese and stir constantly until melted
Continue to add cheese, gradually, stirring constantly until melted, making sure that each addition is
melted.
To Serve:  Remove to fondue pot (or other pot), chafing dish, or heated casserole.  Spear cubes of
bread with fork, then dip, and stir into the fondue and ENJOY

Scalloped Ham and Potatoes

A very simple recipe, but good and filling.   This recipe will make enough for 2 to 4 people...add more potatoes, and ham for more people or for bigger appetites

  1. 3 to 4 medium to large sized baking potatoes, peeled, and sliced thinly (thicker slices will take longer to cook), should be cut into 11/2 inch to 2 inch in diameter slices

  2. 3/4 pound to 1 pound of ham, cut into 1/2 inch square pieces

  3. 1 medium Onion chopped

  4. milk

  5. Flour

  6. butter

Combine in a large casserole dish, Potatoes, Ham, and onion, mix well to blend.  Pour milk over the mixture until casserole dish is 1/2 to 3/4 full.  If you add more milk to mixture the end result will be wetter.   Start with the least amount and add more later as it cooks.  Sprinkle top of mixture with flour until top is covered with flour (approximately 1/2 cup of flour).   Add butter to top of flour in small pieces cut up (about a table spoon).  Mix well again. 

Heat oven to 350 degrees.  Place casserole in oven and bake for 1 hour with dish covered.  Mixing about every half hour.   After first hour is complete, mix again.  Add additional time until potatoes are soft and the milk in the bottom has thickened....Everyone's time will vary with this recipe..I usually cook mine about 1hour and 15 min, depending on the thickness of my potatoes.  Add salt and pepper as desired.  Serve...and Enjoy.

Stove Top Macaroni and Cheese

This is one of my childhood favorites that my mom used to make for me for lunch.  To this day it remains one of my favorites for lunch.

  1. 1 cup uncooked elbow macaroni

  2.   5 slices of American Cheese broken into small pieces

  3. 2 tablespoons of Butter or Margarine

  4. 2 tablespoons of flour

  5.   1 cup of milk

Cook Pasta according to package directions and drain. Set aside.  In medium sized sauce pan melt butter.  Add flour.  Mix until creamy paste is formed.  Add milk. Continue to mix until mixture becomes slightly thickened.  Slowly add cheese mixing continually until all cheese is added.   When cheese is completely melted add macaroni.  Ready To serve.  Add Salt and Pepper to taste.  This is enough to serve 2 people.  You can double the recipe as needed for more people.  Enjoy.

Kitty Litter Cake

I found this recipe while surfing the net.  I made it for a party and what a great conversation piece and delicious desert too.   Just be sure that you buy a clean litter box and scoop, but don't tell anyone that you bought it new. 

  1. 1 spice or German Chocolate cake mix

  2. 1 white cake mix

  3. 1 package white sandwich cookies

  4. 1 large package vanilla instant pudding mix

  5. green food coloring

  6. 12 small tootsie rolls

  7. 1 new kitty litter box

  8. 1 new kitty litter box liner

  9. 1 new pooper scooper

Prepare cake mixes and bake according to directions (any size pans)

Prepare pudding mix and chill until ready to assemble

Crumble White Sandwich cookies in small batches in a blender, they tend to stick so scrape often.  Set aside all but about 1/4 cup.   To the 1/4 cup cookie crumbs add a few drops of green food coloring and mix using a fork or shake in a jar.

When cake are cooled to room temperature, crumble into large bowl.  Toss with half the remaining white cookie crumbs and the chilled pudding.  You probably wont need all of the pudding.   Mix it with the cake and feel it; you don't want it soggy just moist.  Gently Combine

Line new, clean kitty litter box.  Put mixture into litter box

Put three unwrapped tootsie rolls in a microwave safe dish and heat until soft and pliable.  Shape ends so they are no longer blunt, curving slightly.  Repeat with 3 more tootsie rolls and bury in the mixture.

Heat remaining tootsie rolls 3 at a time in the microwave until almost melted.  Drape them on the top of the cake, and sprinkle with cookie crumbs.  Or only spread 5 of the remaining tootsie rolls over the top; take one and heat until pliable, hang it over he side of the kitty litter box; sprinkling it lightly with cookie crumbs

Place the box on newspapers and sprinkle a few of the cookie crumbs around.  Serve with a new pooper scooper.
