Good Morning Casserole

16oz package pork sausage
8oz loaf Italian or French bread
3 cups milk
8 large eggs
8oz American cheese slices

In a skillet over medium heat, cook sausage until browned, stirring occassionally.

Preheat oven to 350 degrees.

Slice bread into 1/2 inch thick diagonal slices.

Line bottom of nonstick or greased 13x9 baking dish with bread.

Spoon all but 1/2 cup of sausage of bread.

Beat eggs and milk until well mixed.

Pour over sausage and bread and press with spatula so milk mixture is absorbed.

Top with cheese.

Sprinkle remaining sausage on top.

Bake 30 minutes.

Egg Souffle

2 eggs
1 1/2 cups milk
1/4 tsp salt
1/4 cup sugar
3/4 cup flour
1/2 stick butter

Preheat oven to 350 degrees.

Melt butter in square glass pan.

Beat eggs, milk, salt, sugar, and flour with mixer.

Bake for 30-45 minutes.

Breakfast Cookie

2 cups baking mix

1 lb sausage

2/3 cup milk

12oz shredded cheddar cheese

Preheat oven to 400 degrees, grease cookie sheet.

Mix all ingrediants together.

Drop by heaping tablespoons onto cookie sheet.

Bake 20 minutes.

Breakfast Pizza

1 package pizza crust mix
1 lb sausage
1 cup shredded cheddar cheese
2 cups thawed hash browns
4 eggs
3 tbsp milk
1/2 tsp salt
1/8 tsp pepper
2 tbsp parmesan cheese

Preheat oven to 375 degrees.

Brown and drain sausage.

Prepare crust as directed.

Spoon cooled sausage over crust.

Sprinkle potatoes and cheese.

Beat eggs, milk, salt and pepper together.

Pour potatoes and cheese.

Sprinkle with parmesan cheese.

Bake for 30 minutes.

Baked Sunrise Frittata

1 tbsp oil
1 1/2 cup finely chopped cooked ham
3/4 cup shredded cheddar cheese
8 slightly beaten eggs
1/3 cup milk
1 can chili peppers
1/4 cup chopped onions
1/2 tsp dry oregano
1/4 tsp salt
1 1/2 cup salsa
1 1/2 cubed potatoes

In 10 inch oven safe skillet cook potatoes in hot oil, uncovered over medium heat for heat.

Cover and cook five more minutes.

Remove from heat.

Sprinkle ham and 1/2 of cheese over potatoes.

Stir eggs, milk, peppers, onions, oregano, and salt.

Pour into skillet.

Bake for 25 to 30 minutes, then sprinkle with rest of cheese.

Serve with heated salsa.
