Penne
with Peas
In the time it takes
for your pasta to cook you can prepare the rest of the ingredients for this
savory meal. Serve with mixed green salad, tossed with your favorite low-fat
vinaigrette.
6 oz. whole-wheat penne
or other sturdy pasta
1 shallot, minced
1 tbsp. olive oil
2 slices vegetarian Canadian bacon, diced
1 cup green peas (fresh or frozen)
1 vine-ripened tomato, seeded and chopped
minced herbs (optional)
Cook penne until al dente in a large saucepan of boiling salted water.
Meanwhile, heat oil in a
skillet over medium heat. Add shallot and cook until soft. Add diced vegetarian
Canadian bacon and cook 1 minute. Stir in peas and tomato and heat through.
Drain pasta and toss
with the pea mixture. Sprinkle minced herbs on top if desired.
