Chocolate Chip Scones
A hands-down favorite at my house! A charming breakfast, easy and quick to make.


1 tablespoon apple cider vinegar
Approximately 1 cup soymilk

1 1/2 cups unbleached flour
1 1/2 cups spelt flour or whole wheat pastry flour
1/2 cup sugar
3 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
1/2 cup margarine
3 teaspoons vanilla extract

1 cup chocolate chips,
OR 1/2 cup toasted walnuts, coarsely chopped, 1/2 cup dried cherries, and 1/2 cup chocolate chips

Preheat over to 425 degrees. Lightly mist a nonstick cookie sheet with cooking spray. Add vinegar to soymilk and set aside.

In a large mixing bowl, mix together the dry ingredients. Add the margarine and cut in using a pastry blender or two knives or your fingers, until the mixture becomes crumbly, like cornmeal.

Add either the chocolate chips or the cherry-walnut-chocolate chip mixture and mix well.

Add vanilla to the soymilk mixture and pour 3/4 of the mixture into the dry ingredients. Stir quickly until the mixture forms a soft dough. Add more soymilk only if the dough is too dry.

Turn the dough onto the cookie sheet in 4 equal parts. Shape each part into a thick circle about 5-7 inches in diameter. Using a sharp knife, score the top of each circle, dividing it into quarters.

Bake for 12 minutes, or until toothpick inserted in the middle comes out dry. The bottoms will be lightly browned.
