Tahini-Lemon Sauce
This versatile sauce can be served as a salad dressing, on falafel, or as a vegetable dip. Vary the consistency by adjusting the amount of water.

3/4 cup sesame tahini
5 tablespoons fresh lemon juice
1 -2 cloves garlic, minced
3/4 to 1 1/2 cup water
1/2 to 1 tsp. salt, to taste
1/4 cup minced parsley, optional
cayenne, to taste, optional

Place tahini, lemon juice and garlic in food processor or blender. Puree, and with the motor running, slowly add water until the sauce reaches the desired consistency. (Sauce will thicken as it sits.) Transfer to a small bowl or container, and season to taste with salt, parsley, and cayenne. Cover tightly and refrigerate until ready to use.
